I'm not too up to date on Intel systems but have been looking at an A64 system for myself which I'll be busy in the next couple weeks.
You're better off going for one 6800GT at the moment rather than two 6600GT's, similar price and performance and you still have the option of a second 6800GT in the future. Go for the DFI motherboard, from what I've read the Fatality is just a gimick you pay more for. The best SLI mobo is the DFI, the best value for money SLI is the Asus. The SanDiego 4000+ seems a bit like overkill, especially for internet surfing and champ manager. Go for the 3700+ and you'll probably not notice any difference other than the £100 in your pocket. The extra bonus with the Athlon system is it will be skt 939 which will allow you to get a dual core cpu in the future without changing motherboard.

I would agree with the better with a single 6800GT now than x2 660GT.
The ABIT SLi I'm not too sure about. The Ultra is highly rated but I haven't seen a review of the SLi boards yet. 1 thing that I have noted across the boards is that in general the ABIT boards seem to give better performance out of the box than the last few DFIs whereas the DFIs may ultimately go higher they require a lot more tweaking to get there (true of NF7 v Lp II & NF8 v Lp nF3 250Gb).
